I have already added a few of these places to my "to do" list, including Border Grill at the Forum Shops, Payards, and Bouchon. I've already tried the Jazz brunch at Wynn and Jasmine brunch at Bellagio, which are both excellent, and I will enjoy them both again sometime, after I try a few others.
A couple that were already on my list (and will stay there until I try them): the Gospel Brunch at Hard Rock and the Sterling Brunch at BLT in Bally's.

There are menus and website there, and as you go down the list you will see them highlighted on the map to the right. That way you know exactly where you are going!
